Broccoli Cheddar Egg Bites

Ingredients

  • 6 eggs
  • 1 1/2 cups broccoli, lightly steamed and chopped
  • 1 1/4 cups shredded extra sharp cheddar cheese
  • 1/4 cup whole plain Greek yogurt
  • Salt and pepper to taste
  • Red pepper flakes to taste
  • Olive oil spray

Preparation

  1. Preheat your oven to 350F.

  2. Blanch the broccoli if you haven’t already until it is bright green and slightly soft.

  3. Whisk the eggs, Greek yogurt, and salt and pepper together until smooth.

  4. Spray a standard 12-cup muffin tin with olive oil and add the broccoli until evenly distributed.

  5. Add the cheese until evenly distributed.

  6. Add the egg mixture about 1 tablespoon at a time to each cup to ensure it is evenly distributed.

  7. Season with red pepper flakes if desired and bake for about 20 minutes or until the egg cups are set.

Storage and reheating

  1. Enjoy immediately or store in the fridge or freezer.

  2. Microwave for 30 seconds to 1 minute to reheat.
