Baked Cloud Eggs with Cheese
Ingredients
- 2 eggs
- 1/2 teaspoon lemon juice
- Pinch of salt
- 20 grams parmesan cheese (can be substituted with finely grated cheddar)
- Chopped parsley leaves
Preparation
Preheat oven to 200°C with bottom heat and fan on.
In a bowl, combine egg whites, lemon juice, and salt. Beat until stiff peaks form.
Fold in the parmesan cheese using a spatula until just combined.
Line a baking sheet with parchment paper. Divide the egg white mixture into two portions on the sheet.
Bake the egg whites for 5 minutes. Remove from oven, place the egg yolks in the center of each, and bake again for about 4 minutes or until the yolks reach desired doneness.
Serve sprinkled with chopped parsley, and add salt and pepper to taste if desired.
Tips
Adjust the yolk cooking time to achieve the desired level of doneness.
Serve with toast or enjoy on its own for a delicious meal.
