Rocky Road or S’mores Cookie Dough Bars

Ingredients

  • 1 1/2 cups raw cashews
  • 1 cup oat flour
  • 3 cups soft pitted medjool dates
  • 2 tsp vanilla extract
  • 1 cup non-dairy chocolate chips
  • 1 cup vegan marshmallows, chopped
  • 1/2 cup roasted almonds, optional

Preparation

  1. Add cashews to the food processor and process until they form a fine flour

  2. Add oat flour, dates, and vanilla and process again until dough forms

  3. Put dough in bowl and mix in chips, chopped marshmallows and optional nuts with your hands

  4. Press into wax paper lined 8” square baking pan and press additional chips into top if desired

  5. Place in fridge to chill

  6. Slice into bars when cold and enjoy

  7. Store in fridge or freezer & enjoy
