Vegan Gluten-Free Cookie Dough Bites

Ingredients

  • 1 1/2 cups raw cashews
  • 1 cup gluten-free fine oat flour
  • 3 cups soft pitted medjool dates
  • 2 tsp vanilla extract
  • 1 cup mini chocolate chips

Preparation

  1. Add cashews to a food processor and process until they form a fine flour

  2. Add oat flour, dates, and vanilla and process again until dough forms

  3. Put dough in a medium bowl and mix in chips

  4. Roll into tablespoon-sized balls

  5. Wet your hands every so often while rolling to avoid sticking

  6. Place bites in the fridge to chill

  1. Store in fridge or freezer
