Vegan Gluten-Free Cookie Dough Bites
Ingredients
- 1 1/2 cups raw cashews
- 1 cup gluten-free fine oat flour
- 3 cups soft pitted medjool dates
- 2 tsp vanilla extract
- 1 cup mini chocolate chips
Preparation
Add cashews to a food processor and process until they form a fine flour
Add oat flour, dates, and vanilla and process again until dough forms
Put dough in a medium bowl and mix in chips
Roll into tablespoon-sized balls
Wet your hands every so often while rolling to avoid sticking
Place bites in the fridge to chill
Storage
Store in fridge or freezer
