Cheesy Crispy Vegan Potato Tots
Ingredients
- 600g potatoes
- 1 tablespoon of flax seeds
- 4 tablespoons of water
- 1 teaspoon of turmeric powder
- 1 teaspoon of baking powder
- 1/2 cup of vegan cheese
- Salt and pepper
- 2 cups of Panko breadcrumbs
- 1 cup of oil for frying
Preparation
Peel and cook the potatoes for about 20 minutes until soft. Allow to cool.
Mix flax seeds with water and set aside.
Mash the potatoes with a fork, then add the turmeric powder, baking powder, vegan cheese and the flax seeds and water, plus salt and pepper. Mix together until the potato mix is sticky and wet.
Spoon out 1 teaspoon of mixture and roll into breadcrumbs. Cover and shape into squares.
Add the tots carefully to a small saucepan of oil. Leave to cook until crispy and golden.
Once cooked place on a plate with paper towels to soak up the excess oil. Serve with a delicious dip of your choice and enjoy.
