Chocolate-Covered Coconut Bars

Ingredients

  • 4 cups shredded coconut
  • 1 pinch salt
  • 1 teaspoon cornstarch
  • 1 large can sweetened condensed milk
  • 500 grams chocolate

Preparation

  1. Prepare a wide tray with a metal rack or parchment paper on it.

  2. In a deep bowl, combine the shredded coconut, salt, cornstarch, and sweetened condensed milk. Mix with a wide plastic spoon until it forms a cohesive dough.

  3. Shape the dough into uniform rectangles and place them on the rack to dry and firm up for several minutes.

  4. Melt the chocolate in a deep bowl over a double boiler on low heat, stirring with a wide plastic spoon until smooth.

  5. Dip each coconut piece into the melted chocolate using a fork, coat completely, shake off excess, and place back on the rack. Repeat for all pieces.

  6. Allow the chocolate to set completely before serving.
