Fried Donuts with Custard Filling

Ingredients

Dough

  • 3 3/4 cups flour
  • 2 1/4 tablespoons fine granulated sugar
  • 1 tablespoon instant yeast
  • 1/2 cup soft butter
  • 1/2 tablespoon baking powder
  • 1 large egg
  • 1 teaspoon liquid vanilla
  • 2 1/2 tablespoons milk
  • 1/4 teaspoon salt
  • 1 cup warm water

Custard

  • 1 cup milk
  • 1 teaspoon liquid vanilla
  • 4 large egg yolks
  • 3 tablespoons fine granulated sugar
  • 4 teaspoons flour
  • 5 teaspoons starch
  • 1 teaspoon soft butter

For decoration

  • Chocolate sauce or powdered sugar

For frying

  • Oil

Preparation

  1. To make the custard, heat the milk in a stainless steel pot. In a wide bowl, combine the egg yolks, vanilla, and sugar, and whisk with a hand whisk until the mixture lightens in color. Add the flour and starch, and stir to mix.

  2. Pour the hot milk over the egg yolk mixture and stir to combine. Return the mixture to the pot, reduce the heat, and stir with a wooden spoon for 4 minutes until it thickens.

  3. Transfer the custard to a deep glass dish, cover with plastic wrap, and refrigerate to cool.

  4. For the dough, in a mixer bowl, combine the flour, sugar, yeast, baking powder, and salt. Attach the dough hook and mix for a few seconds. Add the remaining ingredients and continue kneading until a smooth dough forms.

  5. Place the dough in an oil-greased bowl, cover, and let it rise in a warm place until doubled in size.

  6. Divide the dough into medium-sized balls, cover, and let them rise again until doubled in size.

  7. Heat oil in a deep frying pan. Fry the donut balls in batches on medium heat for 5-6 minutes, stirring continuously, until golden brown. Remove and place on absorbent paper to cool completely.

  8. Using a serrated knife, cut open the donuts without separating them and stuff each with about 2 tablespoons of custard.

  9. Arrange on a serving dish and decorate with chocolate sauce or sprinkle with powdered sugar.
