Mocha Noir Cold Brew Coffee Chia Pudding

Ingredients

  • 310ml mocha noir cold brew coffee
  • 4 tbsp. chia seeds
  • 4 tbsp. crunchy peanut butter
  • 1 piece of dark chocolate
  • 6 strawberries, sliced
  • chia jam
  • 350g strawberries
  • 2 tbsp. chia seeds

Preparation

  1. The night before – add the chia seeds to a bowl, then pour over the mocha noir cold brew coffee, stir thoroughly, cover and place in the fridge overnight

  2. We always have a jar of chia berry jam on the go - but if you don’t simply place a small pan on the hob on a medium low heat and add fresh or frozen berries and stir in 2 tbsp of chia seeds

  3. This will take about 10 minutes, stir occasionally

  4. Set to one side to cool

  5. To serve add a heaped spoonful of peanut butter to the base of each jar, followed by a layer of the chia jam, then add the mocha noir chia pudding

  6. Top the jar with fresh strawberries, peanut butter and a sprinkle of dark chocolate, with half a strawberry

  7. Enjoy!
