Red Lentil Hummus

Ingredients

  • 3 cups water
  • 1 cup red lentils uncooked, rinsed & sorted
  • 1 small onion diced
  • 1 clove garlic minced
  • 1/2 cup tahini
  • 1/2 tsp salt
  • 3/4 tsp smoked paprika
  • 2 tbsp lemon juice

Preparation

  1. Add the water, lentils, and onion to a medium saucepan

  2. Bring to a boil and simmer for about 15-20 minutes, until lentils are softened but not mushy

  3. Drain, rinse, and let cool for about 10 minutes

  4. Add cooled lentil-onion mixture to a food processor

  5. Add garlic, tahini, salt, smoked paprika, and lemon juice

  6. Process until smooth and well combined

  7. Season as desired

  8. Serve with vegetable slices or chips
