Raspberry White Chocolate Cookies

Ingredients

  • 3 tbsp of melted ghee butter
  • 1 egg
  • 1 tsp vanilla extract
  • - 1/2 cup of brown sugar
  • 1/2 cup of plain flour
  • 1/2 cup of oats
  • 1/2 cup of frozen raspberries
  • 3/4 cup white chocolate chips

Preparation

  1. Preheat the oven to 180 degrees celsius and line a baking tray with baking paper

  2. Add the butter, egg and vanilla extract to a bowl and mix well

  3. In a separate bowl, combine the flour, sugar and oats then add to the wet mixture

  4. Fold in the raspberries and chocolate chips then use a spoon to yield 6 cookies on the baking paper (they will flatten out in the oven so do not place too close together)

  5. Bake for 12-14 mins until golden round the edges and leave to cool for 10 minutes before enjoying!
