Vegan Coconut Flour Kaiserschmarrn with Applesauce and Berries

Ingredients

  • spelt flour or buckwheat flour
  • coconut flour
  • grated coconut
  • applesauce
  • milk
  • vanilla extract
  • apple cider vinegar
  • baking powder
  • coconut oil

Preparation

  1. Mix the spelt flour or buckwheat flour with coconut flour and grated coconut in a large bowl.

  2. Mix applesauce with the milk and add to the flour mixture. You can also add vanilla extract for more flavor.

  3. Mix the apple cider vinegar with baking powder and stir it into the batter.

  4. Let the dough sit for at least 10 minutes.

  5. Put some coconut oil in a pan, heat it and add the entire batter.

  6. When bubbles form on the top, turn it over and fry for a few more minutes on low heat.

  7. Chop it into small pieces with a pancake turner.

  8. If necessary, roast it on low heat.

  9. The Kaiserschmarrn is ready when the outside is nicely browned and crispy.

  10. Tip: Serve with applesauce and powdered sugar, or caramelize it a little on the pan, or serve with jam or fruit compotes as desired.
