Vegan White Bean Blondies

Ingredients

  • 1 can white beans (drained)
  • 1/2 cup almond butter
  • 1/2 cup applesauce
  • 1/2 tsp baking soda
  • 1 scoop vanilla protein powder
  • 2 Tbsp coconut flour
  • Pinch cinnamon
  • Pinch pink sea salt
  • Vegan dark chocolate chips (to taste)

Preparation

  1. Blend all ingredients except the chocolate chips

  2. Fold in chocolate chips

  3. Grease a baking dish with coconut oil and line with parchment paper

  4. Bake at 350°F for 20 minutes

  5. Let it cool completely before removing and slicing into squares

  6. Best when refrigerated
