A Frittata
Ingredients
- This frittata I made Tex-Mex style. I used leftover roasted veggies and potatoes (plus added more)
- leftover pork chops, salsa, @balancedbites Tex-Mex blend (about 2 tsp to veggie/meat blend & another 3 to whisked eggs & cottage cheese blend)
- eggs of course (8 in this one)
- and then I topped it with sliced cherry tomatoes and green onions
Preparation
The best part is that it was even better cold so leftovers were beautiful and delicious too
