Apple Buckwheat Pancakes

Ingredients

  • 1/3 cup buckwheat flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tbsp ground flaxseed
  • 1 banana, mashed
  • pinch of salt
  • 2/3 cup unsweetened almond milk ?

Preparation

  1. In a bowl combine all dry ingredients

  2. Add in mashed banana and remaining wet ingredients to the bowl and whisk together

  3. Fold in diced apple and set aside

  4. Using a 1/4 cup scoop, scoop out batter to a preheated griddle (I use nonstick surfaces so I don’t typically use oil to make these, but if you don’t have that, feel free to grease your pan to prevent sticking)

  5. Allow batter to cook for 3-4 minutes or until bottom is golden and easy to flip

  6. Do the same for the other side until fully cooked

  7. Repeat until batter is gone (I made 5 pancakes in total)

  8. Feel free to increase amounts as desired
