Apple Buckwheat Pancakes
Ingredients
- 1/3 cup buckwheat flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1 tbsp ground flaxseed
- 1 banana, mashed
- pinch of salt
- 2/3 cup unsweetened almond milk ?
Preparation
In a bowl combine all dry ingredients
Add in mashed banana and remaining wet ingredients to the bowl and whisk together
Fold in diced apple and set aside
Using a 1/4 cup scoop, scoop out batter to a preheated griddle (I use nonstick surfaces so I don’t typically use oil to make these, but if you don’t have that, feel free to grease your pan to prevent sticking)
Allow batter to cook for 3-4 minutes or until bottom is golden and easy to flip
Do the same for the other side until fully cooked
Repeat until batter is gone (I made 5 pancakes in total)
Feel free to increase amounts as desired
