Banana Pancake

Ingredients

  • 100ml milk (i use soya)
  • 200g mashed over ripe banana
  • 100g self raising flour
  • A splash of water
  • 1 tsp baking powder (gf if required)
  • a squeeze of lemon juice
  • Maple syrup for drizzling

Preparation

  1. Chop banana and microwave for 1 minute until mushy (old spotty bananas are a must and even better if you’ve got some from frozen as when microwaved they create a natural sweet juice)

  2. Put everything into a bowl and mix until smooth

  3. Put some coconut oil into a pan and fry pancakes on each side for a minute or so

  4. Top with maple syrup
