Black Beans, Cilantro Rice & Yuca

Ingredients

  • 2 Cans of Organic Black Beans
  • 1/2 Small Onion
  • 2 cloves of Garlic
  • 1/2 Green Bell Pepper
  • 1 tsp of Cumin
  • Bay Leaf
  • Fresh Chopped Cilantro
  • Salt & Pepper to taste
  • 1/2 Cup of Water
  • Organic Brown Jasmine Rice
  • Yucca
  • Olive Oil
  • Chopped Garlic

Preparation

  1. Sauté the onion, garlic and green pepper until the onion is translucent

  2. Add the spices and water and cook on medium heat for 2o-25 minutes

  3. Add the fresh Cilantro before serving

  4. Frozen Yuca

  5. Cook according to package directions

  6. Add olive oil, salt and chopped garlic to drained Yuca
