Blueberry and Chia Overnight Oats

Ingredients

  • 1/2 cup rolled oats (gluten free if you want)
  • 1 tbsp chia seeds
  • 2/3 cup plant milk
  • 1 tsp maple syrup (can use agave or sweetener of your choice)
  • 1/2 cup frozen blueberries
  • 1 tbsp unsalted raw pumpkin seeds

Optional toppings

  • lime zest
  • quinoa puffs
  • fresh blueberries

Preparation

  1. Stir the oats and chia seeds in a bowl or jar.

  2. Add the plant based milk and maple syrup and stir again.

  3. Top with blueberries and pepitas.

  4. Cover and let sit overnight in the fridge.
