Blueberry and Chia Overnight Oats
Ingredients
- 1/2 cup rolled oats (gluten free if you want)
- 1 tbsp chia seeds
- 2/3 cup plant milk
- 1 tsp maple syrup (can use agave or sweetener of your choice)
- 1/2 cup frozen blueberries
- 1 tbsp unsalted raw pumpkin seeds
Optional toppings
- lime zest
- quinoa puffs
- fresh blueberries
Preparation
Stir the oats and chia seeds in a bowl or jar.
Add the plant based milk and maple syrup and stir again.
Top with blueberries and pepitas.
Cover and let sit overnight in the fridge.
