Green Pea Veg Patties

Ingredients

  • 2 cups frozen green peas ⁣
  • 100g coriander leaves ⁣
  • 50g mint leaves ⁣
  • 200g broccoli ⁣
  • 1/2 onion ⁣
  • 2 garlics chopped ⁣
  • 1 cup rolled oats ⁣
  • 1/4 cup oat flour (blended oats)⁣
  • 1 cup breadcrumbs (blended bread/ gluten-free bread) ⁣
  • 1/2 toasted sunflower seeds & chopped ⁣
  • 1 tsp curry powder ⁣
  • 1 tsp soy sauce ⁣
  • salt & pepper ⁣
  • pinch chili flakes ⁣
  • 1 tbsp white miso paste ⁣
  • 1/2 lemon zest ⁣

Preparation

  1. You roast the veg & garlic at 180C for 10 minutes then blend it with the rest of the wet ingredients- including herbs (not too much though you want texture like some whole peas)⁣

  2. Add this to the dry mix & combine then roll into balls or patties. Bake in the oven, pan fry or air fryer until golden brown
