Green Pea Veg Patties
Ingredients
- 2 cups frozen green peas
- 100g coriander leaves
- 50g mint leaves
- 200g broccoli
- 1/2 onion
- 2 garlics chopped
- 1 cup rolled oats
- 1/4 cup oat flour (blended oats)
- 1 cup breadcrumbs (blended bread/ gluten-free bread)
- 1/2 toasted sunflower seeds & chopped
- 1 tsp curry powder
- 1 tsp soy sauce
- salt & pepper
- pinch chili flakes
- 1 tbsp white miso paste
- 1/2 lemon zest
Preparation
You roast the veg & garlic at 180C for 10 minutes then blend it with the rest of the wet ingredients- including herbs (not too much though you want texture like some whole peas)
Add this to the dry mix & combine then roll into balls or patties. Bake in the oven, pan fry or air fryer until golden brown
