Healthy Flaxseed Brunch Tacos with Banana and Nut Butter

Ingredients

  • 1/2 cup flax meal
  • 1 cup water
  • 1 tbsp raw almond butter
  • 1/3 cup flour of choice
  • Dash of sea salt
  • Dash of baking soda
  • Optional: 1/2 scoop vanilla plant based protein powder

Toppings

  • Butter of choice
  • Banana (sliced)
  • Cacao nibs
  • Chia seeds
  • Coconut
  • Dark pure maple syrup

Preparation

  1. Soak 1/2 cup flax meal with 1 cup water for at least an hour if possible to enhance digestion.

  2. Add 1 tbsp softened raw almond butter, 1/3 cup flour of choice, dash of sea salt, dash of baking soda, and optional protein powder. Mix all together until batter forms.

  3. Spoon small thin cookie-sized circles of batter onto a lined or oiled pan.

  4. Bake at 350°F for 10 minutes.

  5. Let cool for 5-10 minutes until soft, firm, and bendable.

  6. Spread butter of choice on one half of each taco and add 2 slices of banana.

  7. Optionally top with more nut or seed butter.

  8. Fold each taco in half.

  9. Sprinkle with cacao nibs, chia seeds, coconut, and a dab of dark pure maple syrup.
