Homemade Muskmelon Popsicles for Summer Treat

Ingredients

  • 1 Muskmelon
  • 3 tbsp Maple syrup
  • 1 tsp Lemon juice
  • 1/2 cup Coconut cream
  • 1 tsp Vanilla extract

Preparation

  1. Scoop melon out of the rind, remove all seeds, and place in a blender to make a puree.

  2. Add lemon juice and 2 tablespoons Maple syrup or any sweetener you like to the puree and blend until smooth.

  3. Transfer the blended mixture to a measuring cup with a spout for easier pouring and set aside.

  4. In a stand mixer, add coconut cream, vanilla extract, and 1 teaspoon Maple syrup, then blend on medium speed for 5 minutes.

  5. Pour the muskmelon mixture into popsicle molds and top with the coconut cream mixture.

  6. Place the molds in the freezer for at least 4 to 5 hours or overnight.
