Homemade Vegan Chocolate Chunk Cookies

Ingredients

  • 1 flax egg
  • 1/4 cup coconut oil, melted
  • 1/2 cup plain flour
  • 3/4 cup self raising flour
  • 2 heaped tbsp coconut flour
  • 3 tbsp plant milk
  • 1 tsp vanilla extract
  • 3 tbsp agave or maple syrup
  • 2 tbsp @sweetfreedomuk freedom chcocolate syrup (or sub for chocolate spread)
  • 50g chocolate, cut into chunks

Preparation

  1. Preheat oven to 180 degrees Celsius

  2. Add all the ingredients to a bowl apart from the chocolate and mix together.

  3. Add the chocolate and mix in.

  4. Grab a chunk and roll into a ball. Place on a lined baking tray and squash. Repeat until all the mixture has been used.

  5. Place in the oven for 10 minutes at 180 degrees.
