Joyce's Gorgeous Granola Tarts

Ingredients

  • 1/2 cup pure maple syrup
  • 3 tbsp melted raw coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 2 cups uncooked rolled oats
  • 1 cup slivered almonds
  • 1 cup coconut yoghurt
  • Fresh fruits for garnishing

Preparation

Baking the crust

  1. Pre-heat the oven to 325°F. Next, take 6-8 mini tart pans and grease them.

  2. Take a large bowl to mix in all your ingredients. Keep stirring till everything is perfectly mixed.

  3. Then take a tablespoon and start putting the tart mixture into your greased pans. 3 tbsp per pan gives you the perfect consistency.

  4. Oil your spoon and use the back to make evenly spread the granola mix. Do remember to create a fine crust for the tart by pressing the sides.

  5. Then pop the pans into the oven. Let them bake for 15 minutes or once the granola crusts get a golden hue.

Filling

  1. Take the tarts out once done. Then start reshaping them with the back of your spoon. You want to create a cup-like shape to fill in the yogurt.

  2. Set the pans aside to cool.

  3. Now use a small knife to remove the tarts out of the pans. Be gentle or the crust might crumble.

  4. Fill your tarts with big dollops of yogurt. Try to create a smooth layer by spreading it with a spoon.

  5. Garnish the tarts with your favorite fruits for that final touch.
