Loaded Umami Bean Soup
Ingredients
- 1/2 onion sliced
- 1 red bell pepper sliced
- 3 garlic cloves minced
- 2 tsp cumin seeds
- 1 adobo pepper minced
- 1 jalapeño sliced
- 1 tbsp tomato paste
- 1/2 c white wine
- 30 oz black beans
- 3 tbsp brown rice syrup
- 2 qt veggie stock
- 1 lime juiced
- pinch of salt
- pinch cilantro
Preparation
Sauté onion, bell pepper, garlic, jalapeño, and adobo pepper in a pot until softened
Add cumin seeds and tomato paste, cook for 1 minute to release flavors
Pour in white wine to deglaze the pot, scraping up any bits
Add black beans, veggie stock, and brown rice syrup. Bring to a boil, then simmer for 20-30 minutes until thickened
Stir in lime juice, salt, and cilantro, and adjust seasoning before serving
