Loaded Umami Bean Soup

Ingredients

  • 1/2 onion sliced
  • 1 red bell pepper sliced
  • 3 garlic cloves minced
  • 2 tsp cumin seeds
  • 1 adobo pepper minced
  • 1 jalapeño sliced
  • 1 tbsp tomato paste
  • 1/2 c white wine
  • 30 oz black beans
  • 3 tbsp brown rice syrup
  • 2 qt veggie stock
  • 1 lime juiced
  • pinch of salt
  • pinch cilantro

Preparation

  1. Sauté onion, bell pepper, garlic, jalapeño, and adobo pepper in a pot until softened

  2. Add cumin seeds and tomato paste, cook for 1 minute to release flavors

  3. Pour in white wine to deglaze the pot, scraping up any bits

  4. Add black beans, veggie stock, and brown rice syrup. Bring to a boil, then simmer for 20-30 minutes until thickened

  5. Stir in lime juice, salt, and cilantro, and adjust seasoning before serving
