Pecan Banana Bread
Ingredients
- 1 3/4 cups flour
- 1/3 cup coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 1/3 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 3 large overripe bananas, mashed
- 1/4 cup coconut milk @plenishdrinks / any m*lk
- 1/2 cup of crushed pecans, divided
Preparation
Preheat oven to 180c
Grease your loaf pan
In a medium sized mixing bowl, mash 3 – 4 bananas, add oil and vanilla extract, mix again
Then add the flour, sugar, baking soda, baking powder, 1/2 of the pecans and salt, and mix well, but don’t overmix, just enough until the flour is combined
Pour batter into a greased loaf pan
Top with rest of pecans
Bake for about 50 min – 1 hour or until a toothpick comes out clean
