Pumpkin Steel Cut Oats

Ingredients

  • 1/4 cup Steel Cut Oats (soaked overnight in water then rinsed and drained before use)
  • 1 tbsp ground flax seed
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/4 tsp ginger powder
  • 3 tbsp pumpkin purée
  • Pinch of nutmeg
  • 1 cup almond milk

Preparation

  1. Stir all dry ingredients together in a sauce pan then add in liquids

  2. Combine and bring to a simmer to cook

  3. Continue to cook and stir until thickened to desired consistency

  4. If you’d like to sweeten it up, feel free to add a mashed banana to this or some maple syrup during the cooking process
