Quinoa-Millet Dosa

Ingredients

  • 1 cup white quinoa
  • 1/2 cup little millet (saama)
  • 1/2 cup foxtail millet (navane in kannada)
  • 1/2 cup husked urad dal (black lentils)
  • small fistful poha (flattened rice/rice flakes)
  • 11/2 teaspoon fenugreek seeds.
  • salt to taste .

Preparation

  1. Wash and Soak the millets and quinoa together in a bowl

  2. In another bowl wash and soak urad dal and fenugreek seeds together

  3. Soak atleast for 6-8 hours. Just before grinding wash and soak poha for 20 minutes

  4. Grind the urad dal mixture with little water until it's silky smooth. Make sure it has no texture. Grind the quinoa mixture with soaked poha. This can be slightly textured need not have to be smooth

  5. Combine both of them and let it ferment for 8-10 hours or depending on where you live

  6. Add salt and Make dosa or idli. To this I have packed as much dill leaves as possible

  7. NOTE: YOU CAN USE JUST ONE CUP OF ONE KIND OF MILLET INSTEAD IF SPLITTING INTO 1/2 cups of two kinds
