
Sweet ‘N Spicy Stuffed Japanese Sweet Potatoes

Ingredients
- in the meantime prepare salsa ?
- 2 cups fresh (or frozen) pineapple
- 2 jalapeños (seeded for less heat)
- 1 red bell pepper
- 1 small sweet or red onion
- 1 avocado
- 1 tbsp date (or maple) syrup
- 1/2 tsp chili flakes (if you like it spicy ?) salt and pepper to taste
- wash, seed and dice bell pepper and jalapeños.
- cut pineapple and avocado into small chunks.
- cashew sour cream:
- 1 cup soaked cashews
- 1-2 tsp lemon juice
- 1 tsp apple cider vinegar
- 2-3 tbsp unsweetened plain oat milk
