Vegan Cranberry Orange Banana Bread

Ingredients

Dry

  • 1 1/2 cup oat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • Dash of salt

Wet

  • 4 ripe bananas
  • 4 tbsp coconut sugar
  • 1 tbsp stevia
  • 1/4 cup coconut oil
  • 2 flax eggs (1 tbsp ground flax + 3 tbsp water)
  • Juice from one orange
  • 2 tbsp zest of an orange
  • 1 cup frozen cranberries

Preparation

  1. Start by making your two flax eggs and set aside. Also preheat your oven to 350°F.

  2. In a bowl, combine your dry ingredients.

  3. Then in a separate bowl, combine all of your wet ingredients.

  4. Combine the dry ingredients into the bowl of wet ingredients, adding about one cup at a time to make mixing easier.

  5. Last, add your cup of frozen cranberries.

  6. Bake at 350°F for about 1 hour and 15 minutes.

  7. Check on the bread by sticking a toothpick in it. If it comes out dry, it is ready.
