Vegan Cranberry Orange Banana Bread
Ingredients
Dry
- 1 1/2 cup oat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- Dash of salt
Wet
- 4 ripe bananas
- 4 tbsp coconut sugar
- 1 tbsp stevia
- 1/4 cup coconut oil
- 2 flax eggs (1 tbsp ground flax + 3 tbsp water)
- Juice from one orange
- 2 tbsp zest of an orange
- 1 cup frozen cranberries
Preparation
Start by making your two flax eggs and set aside. Also preheat your oven to 350°F.
In a bowl, combine your dry ingredients.
Then in a separate bowl, combine all of your wet ingredients.
Combine the dry ingredients into the bowl of wet ingredients, adding about one cup at a time to make mixing easier.
Last, add your cup of frozen cranberries.
Bake at 350°F for about 1 hour and 15 minutes.
Check on the bread by sticking a toothpick in it. If it comes out dry, it is ready.
