Baked Banana Bread Oats

Ingredients

  • 1/2 mashed banana
  • 1/2 cup oats (GF)
  • 1/2 cup almond milk
  • 1 tbsp chia seeds
  • 1 tbsp nut butter (use almond for Paleo)
  • 1 tsp ground cinnamon
  • 1 tsp baking soda (for Paleo) or baking powder (for vegan)
  • 1 tsp organic maple syrup (or vanilla extract for non-Paleo)
  • 1/4 cup organic sugar-free dark chocolate chips

Preparation

  1. Preheat your oven to 400°F (200°C).

  2. In a mixing bowl, combine the mashed banana, oats, almond milk, chia seeds, nut butter, ground cinnamon, baking soda (or baking powder), and organic maple syrup (or vanilla extract).

  3. Stir the ingredients together until well combined.

  4. Gently fold in the organic sugar-free dark chocolate chips.

  5. Transfer the mixture to a ramekin.

  6. Top with additional chocolate chips if desired.

  7. Place the ramekin in the preheated oven and bake for 20-25 minutes, or until the oats are set and the top is golden.

  8. Once baked, remove from the oven and let it cool slightly before enjoying.

  9. You can also top it with more nut butter if desired.
