Classic Sweet Potato Casserole with Marshmallow Topping
Ingredients
- 4 medium-sized sweet potatoes (diced)
- 2 cups water
- 1/4 cup melted butter (plant-based spread, e.g., @kitehillfoods)
- 1/2 cup coconut sugar
- 1/2 tbsp cinnamon
- Mini marshmallows (e.g., @wholefoods brand)
- Chopped pecans (optional)
Preparation
Preheat Oven: Preheat your oven to 375°F (190°C).
Boil Sweet Potatoes: In a large pot, bring the diced sweet potatoes and water to a boil.
Cook and Mash: Reduce the heat to low, cover the pot, and let the sweet potatoes simmer for about 25 minutes until they are soft. Once cooked, drain the water and mash the sweet potatoes.
Mix Ingredients: Transfer the mashed sweet potatoes to a bowl. Add the melted butter (plant-based spread), coconut sugar, cinnamon, and chopped pecans (if using).
Combine: Stir all the ingredients together until well combined, creating a flavorful mixture.
Spread in Casserole Dish: Spread the sweet potato mixture evenly into a casserole dish.
Add Marshmallows: Top the sweet potato mixture with mini marshmallows, evenly distributing them over the top.
Bake: Place the casserole dish in the preheated oven and bake for 18-20 minutes. Keep an eye on the dish, and once the marshmallows turn golden and gooey, it's ready.
Serve: Remove the casserole from the oven and let it cool slightly before serving.
