Flavorful Cauliflower & Walnut Tacos
Ingredients
- 3 cups cauliflower
- 1 cup walnuts
- 1 can green chilies
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt & pepper
Toppings
- Shredded cheddar (regular or vegan)
- Jalapeños
- Salsa (e.g., from @nealbrothers)
- Lettuce
Preparation
Preheat the oven to 375°F (190°C).
Add all the ingredients (cauliflower, walnuts, green chilies, chili powder, cumin, smoked paprika, salt, and pepper) into your food processor. Blend on high for 30 seconds until well combined.
Spread out the mixture on a lined baking sheet.
Bake for 35 minutes, stirring halfway through. Then, broil for 2 minutes at the end to achieve a nice finish.
Assemble your tacos or taco bowls with lettuce, avocado, cheese, jalapeños, and salsa.
