Flax and Pumpkin Seed Granola

Ingredients

  • 1 cup flax seeds (soaked in equal parts filtered water overnight)
  • 2 tbsp coconut butter
  • 2 tbsp raw pumpkin seeds
  • 2 tbsp raw cacao nibs
  • 1/4 cup raw shredded coconut
  • dash of cinnamon and cardamom

Preparation

  1. Soak the flax seeds in equal parts filtered water overnight

  2. Mix them in a large bowl with the remaining ingredients.

  3. Spread the mixture thinly on an oiled or lined baking sheet.

  4. Bake at 250 degrees for 45-50 minutes, tossing halfway through.
