Mint Slice Matcha Smoothie

Ingredients

  • ✅ 1 cup unsweetened almond milk (homemade is best)
  • ) ✅ 2 tsp Matcha Green Tea powder (look for organic)
  • ✅ 1-2 sprigs of fresh mint leaves
  • ✅ 1 large frozen banana (peel before freezing)
  • ✅ 1 tbsp chia seeds (I use white to keep the glowing colour)
  • ✅ 1/8 – 1/4 slice of avocado (depending on what you can tolerate)
  • a handful of washed organic baby spinach
  • ✅ 2 drops of pure vanilla essence or 1/8 tsp vanilla bean powder
  • 1 heaping tbsp cacao nibs for topping/crunch

Preparation

  1. Add all ingredients (except the nibs) to a high-speed blender or thermomix & blitz on high until creamy & smooth

  2. Ensure the matcha powder is well combined

  3. Add the cacao nibs & blitz for 1-2 more seconds (so the smoothie retains some crunch)

  4. Top with extra cacao nibs and/or mint leaves

  5. Note: if you’re not a fan of Matcha or green tea (crazy!) then simply omit the matcha & you’re left with a mint slice smoothie
