Mostly Raw Zucchini Rolls

Ingredients

  • 1-2 zucchinis thinly sliced
  • for the tomato sauce
  • 4 tbs of olive oil
  • 4 tbs of minced garlic
  • 1 tbs of minced shallot
  • 1/4 cup of chopped red bell peppers
  • 1/2 of dried oregano
  • 2 cups of chopped tomato
  • 1/2 tsp of pink himalayan salt
  • 1/4 tsp of black pepper
  • for the cheese
  • 1 cup of soaked raw cashew
  • 1 clove of garlic
  • 2 tbs of nutritional yeast flakes
  • 3/8 cup of filtered water
  • 1/4 tsp vinegar

Preparation

  1. In a medium sized pot on medium heat add olive oil, garlic, and shallot

  2. Stir until fragrant and add remaining ingredients

  3. Allow to simmer for 20 minutes, stirring occasionally

  4. Combine all ingredients for cheese into a blender and blend until creamy smooth

  5. Set aside until sauce is ready

  6. Once time is up remove sauce from heat

  7. Pour sauce into serving dish of choice and set aside

  8. Lay out zucchini strips and place a spoonful of cheese onto of each strip

  9. Roll up zucchini slices and place right on top of sauce

  10. Garnish with fresh basil and enjoy ❤️??? #threebunnies
