Ingredients

  • 1 t. olive oil ⠀
  • 1 t. cumin⠀
  • 1 t. chilli powder⠀
  • 1/4 c. tomato paste⠀
  • 1 t. chipotle paste (i love olo chipotle paste @olofoods)⠀
  • 1 1/2 c. red lentils, rinsed ⠀
  • 2 c
  • water (additional 2 c
  • on reserve)⠀

Preparation

  1. In a large skillet with deep sides or. saucepan, add 1 T. olive oil to onions and cook at a low heat until soft and translucent - about 5 minutes. Add garlic and cook for an additional minute. Add cumin and chilli powder and allow to cook while stirring until fragrant - about 1 minute. Add tomato paste and chipotle paste, lentils and 2 c. of water. Simmer at a low heat for about 25 minutes or until the liquid has cooked off and the lentils are soft. Red lentils, when cooked, will take on a mushy texture. I do watch this carefully, as I often have to add more water during the cooking process. When I made these last, I needed to add 2 additional cups until the lentils were soft. When they reach the right consistency, I will often smash them with a potato masher. Serve with sliced avocado, leafy green and herbs of your choice. Sometimes I'll add hot sauce, vegan cheese and toasted pepitas. ⠀
