Raw Gingerbread Cookies


  • 1 + 1/4 cups of medjool dates, pitted (high fiber)
  • 1 cup raw almonds (if using sprouted almonds - leave out to dry a little before incorporating into recipe) - (high protein - weight loss aid)
  • 1/2 tsp cinnamon (improves digestion)
  • 1/2 tsp ground ginger (anti-cancer properties) - you can use fresh ginger as well
  • 1/4 tsp nutmeg (provides relief from insomnia)
  • 1/4 tsp vanilla extract
  • 1/8 tsp cloves (anti-carcinogenic properties)
  • Pinch of sea salt or Himalayan salt


  1. Combine almonds, and spices in a food processor until almonds are finely chopped up (no food processor? no problem - grab a hammer and bag - and go at it) ??Add dates, vanilla - blend until ball starts forming or well combined (no food processor? get ready to use your hands and really combine the ingredients in a bowl) ??Place dough on wax paper - place wax paper on bottom and top - and flatten to desired thickness and use cookie cutter! OR form into small balls

  2. Place in fridge until serving or enjoy instantly
