Vegan Cream Cheese-Filled Carrot Cake Bliss Balls
Ingredients
For the Cream Cheese Filling
- 100g vegan cream cheese
- Squeeze of lemon juice
- A little tonka bean
- 1/2 to 1 tsp stevia or other sweetener
For the Carrot Cake Bliss Balls
- 1 grated carrot
- 300g trail mix (nuts & raisins)
- Cinnamon
- 1 tbsp chia seeds
Preparation
Prepare the Cream Cheese Filling
Whisk together the vegan cream cheese, lemon juice, tonka bean, and stevia.
Freeze the mixture in small dollops on parchment paper.
Prepare the Carrot Cake Bliss Balls
In a food processor, combine the grated carrot, trail mix, cinnamon, and chia seeds.
Process until the mixture becomes smooth and sticky.
Assemble the Bliss Balls
Take a portion of the carrot cake bliss ball dough and flatten it between your palms.
Place a frozen dollop of the cream cheese filling in the center.
Form a ball, ensuring the cream cheese is fully covered.
Store the completed bliss balls in the fridge.
