Avocado and Spiced Chickpea Toasties for Two
Ingredients
- 1 large avocado
- 1 lime
- Salt and pepper to taste
- 1 can of chickpeas
- 1/2 teaspoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon mild chili powder
- Pinch of turmeric
- 4 slices of bread for toast
- Optional: unsweetened yogurt
Preparation
Mash the avocado with lime juice, salt, and pepper.
Rinse and pat dry the chickpeas.
Toss the chickpeas with olive oil and roast at 180°C for 20 minutes until crunchy.
Remove chickpeas from oven, season with garlic powder, onion powder, cumin, smoked paprika, mild chili powder, and turmeric, then return to oven for a few more minutes to absorb flavors.
Serve the spiced chickpeas on top of toast spread with mashed avocado, with a squeeze of lime and optionally a spoon of unsweetened yogurt.
