Avocado and Spiced Chickpea Toasties for Two

Ingredients

  • 1 large avocado
  • 1 lime
  • Salt and pepper to taste
  • 1 can of chickpeas
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon mild chili powder
  • Pinch of turmeric
  • 4 slices of bread for toast
  • Optional: unsweetened yogurt

Preparation

  1. Mash the avocado with lime juice, salt, and pepper.

  2. Rinse and pat dry the chickpeas.

  3. Toss the chickpeas with olive oil and roast at 180°C for 20 minutes until crunchy.

  4. Remove chickpeas from oven, season with garlic powder, onion powder, cumin, smoked paprika, mild chili powder, and turmeric, then return to oven for a few more minutes to absorb flavors.

  5. Serve the spiced chickpeas on top of toast spread with mashed avocado, with a squeeze of lime and optionally a spoon of unsweetened yogurt.
