Blueberry Lemon Cheesecake Baked Oats

Ingredients

  • 2/3 cup oats
  • 1/2 tbsp flaxseed
  • 2 tbsp sweetener of choice (or to taste)
  • 1/3 cup plant milk
  • 1/2 tsp vanilla
  • lemon zest (i just eyeballed it but i think it was around 1/2 a lemon)
  • juice of 1/2 a lemon
  • 1/2 tsp baking powder
  • frozen wild blueberries
  • 1/3 tub (50g) vegan almond cream cheese
  • 1 tbsp maple syrup

Preparation

  1. Preheat your oven to fan 180°C

  2. Mix the oats, flax, sweetener, milk, vanilla, lemon juice & zest together

  3. Separately, mix the cream cheese & maple syrup

  4. Mix the baking powder into the oats mix, then fold in the blueberries

  5. Pour the oats into an oven proof dish, saving a few tbsp of the mix

  6. Spoon the maple cream cheese into the middle and cover with the remaining oat mixture

  7. Bake for 25-30 minutes and enjoy hot
