Blueberry Lemon Cheesecake Baked Oats
Ingredients
- 2/3 cup oats
- 1/2 tbsp flaxseed
- 2 tbsp sweetener of choice (or to taste)
- 1/3 cup plant milk
- 1/2 tsp vanilla
- lemon zest (i just eyeballed it but i think it was around 1/2 a lemon)
- juice of 1/2 a lemon
- 1/2 tsp baking powder
- frozen wild blueberries
- 1/3 tub (50g) vegan almond cream cheese
- 1 tbsp maple syrup
Preparation
Preheat your oven to fan 180°C
Mix the oats, flax, sweetener, milk, vanilla, lemon juice & zest together
Separately, mix the cream cheese & maple syrup
Mix the baking powder into the oats mix, then fold in the blueberries
Pour the oats into an oven proof dish, saving a few tbsp of the mix
Spoon the maple cream cheese into the middle and cover with the remaining oat mixture
Bake for 25-30 minutes and enjoy hot
