Caramelized Sweet Potato Breakfast Bowl

Ingredients

  • 1 egg
  • ghee
  • spinach
  • red pepper flakes
  • 1 sweet potato
  • tomatoes
  • 1/2 avocado

Preparation

  1. Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 45 minutes.

  2. Fry 1 egg in ghee.

  3. Sauté spinach with red pepper flakes.

  4. Assemble the bowl with tomatoes and 1/2 avocado.
