Chia Seed Pudding

Ingredients

  • 5 tbsp chia seeds
  • 1 cup almond milk
  • 1/2 cup coconut milk
  • 2 tsp maple syrup
  • 1 ripe avocado, peeled and cut into chunks
  • 1 tsp spiraveg fresh spirulina

Preparation

  1. In a medium size bowl mix the chia seeds with plant-based milk and maple syrup

  2. Set aside for 30 minutes until the chia seeds absorb the liquid

  3. Meanwhile, add the avocado and banana to a food processor and pulse to combine

  4. When smooth, add spiraveg fresh spirulina and stir to combine

  5. Distribute the chia seed mixture into 4 serving bowls/jars, top with a layer of spirulina puree, garnish with coconut flakes and enjoy!
