Chia Seed Pudding
Ingredients
- 5 tbsp chia seeds
- 1 cup almond milk
- 1/2 cup coconut milk
- 2 tsp maple syrup
- 1 ripe avocado, peeled and cut into chunks
- 1 tsp spiraveg fresh spirulina
Preparation
In a medium size bowl mix the chia seeds with plant-based milk and maple syrup
Set aside for 30 minutes until the chia seeds absorb the liquid
Meanwhile, add the avocado and banana to a food processor and pulse to combine
When smooth, add spiraveg fresh spirulina and stir to combine
Distribute the chia seed mixture into 4 serving bowls/jars, top with a layer of spirulina puree, garnish with coconut flakes and enjoy!
