Chocolate Chip Tahini Blondie Cookie Cake
Ingredients
- 2 flax eggs
- 1 mashed ripe banana
- 1 tbsp @miyokos_kitchen vegan butter (or sub do coconut oil or regular butter)
- 1/4 cup tahini
- 1/4 cup @foragerproject plain cashew yogurt
- 2 tbsp blackstrap molasses, or maple syrup or coconut sugar (add more for sweeter versions)
- 3/4 @bobsredmill paleo flour (or almond flour)
- 1/2 @hukitchen salty dark chocolate bar, chopped (or 1/3 cup chocolate chips of choice)
- 1 tsp Baking powder
- 1 tsp pure vanilla extract
- Pink Himalayan sea salt for sprinkling
Preparation
Preheat oven to 350 degrees.
In a large mixing bowl, add flax egg, banana, butter, tahini, yogurt, and blackstrap molasses and mix well until creamy.
Add flour, chocolate and baking powder.
Pour into a lightly oiled cast iron skillet (or baking dish) and bake for 17-20 minutes.
Note that the middle will be soft and cookie-like a brownie.
