Chocolate Chip Tahini Blondie Cookie Cake

Ingredients

  • 2 flax eggs
  • 1 mashed ripe banana
  • 1 tbsp @miyokos_kitchen vegan butter (or sub do coconut oil or regular butter)
  • 1/4 cup tahini
  • 1/4 cup @foragerproject plain cashew yogurt
  • 2 tbsp blackstrap molasses, or maple syrup or coconut sugar (add more for sweeter versions)
  • 3/4 @bobsredmill paleo flour (or almond flour)
  • 1/2 @hukitchen salty dark chocolate bar, chopped (or 1/3 cup chocolate chips of choice)
  • 1 tsp Baking powder
  • 1 tsp pure vanilla extract
  • Pink Himalayan sea salt for sprinkling

Preparation

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, add flax egg, banana, butter, tahini, yogurt, and blackstrap molasses and mix well until creamy.

  3. Add flour, chocolate and baking powder.

  4. Pour into a lightly oiled cast iron skillet (or baking dish) and bake for 17-20 minutes.

  5. Note that the middle will be soft and cookie-like a brownie.
