Coconut Pancakes

Ingredients

  • 1.5 cups of plain flour
  • 1.5 tbsp baking powder
  • 3/4 cup of dedicated coconut
  • 3 tbsp of brown sugar
  • a pinch of sea salt
  • 1.5 cups plant milk
  • 3tbsp of plant based butter or coconut oil

Preparation

  1. Add: 1.5 cups of plain flour, 1.5 tbsp baking powder, 3/4 cup of dedicated coconut, 3 tbsp of brown sugar (Demerara), a pinch of sea salt

  2. Then add: 1.5 cups plant milk, 3tbsp of plant based butter or coconut oil

  3. And mix altogether until a batter is made

  4. Put one ladle full of batter in a pan and cook each until golden

  5. Serve with maple syrup, banana and blueberries
