Creamy Pumpkin Oatmeal with Banana and Spices
Ingredients
- 1/2 cup rolled oats (or to make them creamy add 1/4 cup quick oats and 1/4 rolled oats)
- 1 tbsp flax seed, ground
- 1/2 tsp cinnamon
- 1 tsp molasses
- 1/4 cup pumpkin purée
- Pinch of salt
- 1 cup soy milk
- 1 banana sliced or mashed
Preparation
Combine all ingredients in a saucepan and bring to a simmer.
Stir as it cooks and thickens, for about 3 minutes.
Remove from heat and serve as desired, such as with seeds, berries, and maple syrup.
