Creamy Pumpkin Oatmeal with Banana and Spices

Ingredients

  • 1/2 cup rolled oats (or to make them creamy add 1/4 cup quick oats and 1/4 rolled oats)
  • 1 tbsp flax seed, ground
  • 1/2 tsp cinnamon
  • 1 tsp molasses
  • 1/4 cup pumpkin purée
  • Pinch of salt
  • 1 cup soy milk
  • 1 banana sliced or mashed

Preparation

  1. Combine all ingredients in a saucepan and bring to a simmer.

  2. Stir as it cooks and thickens, for about 3 minutes.

  3. Remove from heat and serve as desired, such as with seeds, berries, and maple syrup.
