Flourless Chocolate Coconut Cookies with Caramel Drizzle
Ingredients
- 1 egg (or flax egg for vegan)
- 1/3 cup organic coconut sugar
- 1 cup almond butter
- 2 tablespoons nut milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 cup coconut shreds
- 1/2 cup chopped chocolate
Caramel drizzle
- 1/2 cup coconut cream
- 1.5 cups pitted dates (or 1/2 cup date syrup)
- Dash of vanilla extract
- Pinch of cinnamon
Preparation
Preheat oven to 350°F
Line baking sheet with parchment paper
Mix together the egg, sugar, almond butter, nut milk, vanilla extract, and baking powder
Fold in coconut and chocolate
Place tiny balls on baking sheet; this makes 12-14 cookies
Bake for 10 minutes
Remove and drizzle with caramel sauce

Blend coconut cream, pitted dates, vanilla extract, and cinnamon until smooth to make the caramel sauce
