French Toast

Ingredients

  • French Toast
  • 4-6 slices of toast (to make gluten free opt for gluten free bread)
  • 1 large banana, sliced into thin strips
  • 2 small strawberries, sliced
  • 1-2 tablespoons peanut butter (make nut free with sun butter)
  • Batter
  • 1/4 cup oat flour
  • 1/2 cup almond milk (opt for oat or hemp milk to make nut free)
  • 1 tbsp nutritional yeast
  • 2 tablespoons creamy almond butter (to make nut free opt for sun butter)
  • 2 tablespoons maple syrups
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • Pinch of salt

Preparation

  1. Whisk dry batter ingredients in a bowl

  2. Add in wet batter ingredients and then whisk batter together

  3. Take bread spread with peanut butter and layer plantains and chocolate chips

  4. Sandwich slices together and dip sandwich into batter

  5. Shake off excess or swipe away excess batter with hands

  6. Place sandwich on a hot griddle and cook until browned on first side (about 4-5 minutes)

  7. Flip and cook on other side until golden

  8. Serve with extra fruit and maple syrup

  9. Also very amazing with tea
