Fruity Summer Rolls with Beetroot Hummus

Ingredients

  • For the summer rolls you need
  • - rice paper
  • - 1 serving of rice noodles
  • - 1 tray of Maza Hoemoes rode biet
  • - 1 ripe mango
  • - 1 kiwi
  • - 1 avocado
  • - 2 carrots, peeled
  • - 6 middle-sized strawberries
  • - 1/3 of a cucumber
  • - 1/6 of a red cabbage
  • - fresh herbs like mint, parsley and cilantro

Preparation

  1. Soak the rice noodles for 5-10 minutes in hot water. Cut or slice the mango, kiwi, avocado, carrots, strawberries, cucumber and red cabbage in small pieces. It’s also possible to use a cookie cutter at this point. Soak the rice paper one by one in warm water for a few seconds until softened. Place them on a flat surface and layer your fruits and vegetables, a teaspoon of the beetroot hummus, some rice noodles and your fresh herbs just above the middle of the rice paper. You could easily roll them up by folding the sides over the filling and then roll them up like a burrito. Repeat this step until you used up all of the ingredients. Serve with hoisin or sweet chili sauce
