Ginger Zucchini Oats Breakfast Bowl

Ingredients

  • 1/2 cup quick oats
  • 1 tbsp ground flax seeds
  • 1/2 tsp cinnamon
  • 1 tsp grated ginger or 1/2 tsp ginger powder
  • 1 mashed banana
  • 1/3 to 1/2 small zucchini, grated
  • 1 cup almond milk
  • Salt to taste

Preparation

  1. Combine all ingredients in a saucepan and stir.

  2. Bring mixture to a simmer and cook for about 3 minutes or until thickened as desired.

  3. Serve with some extra fruits, such as blackberries and blueberries.

  4. You can use rolled oats or make quick oats by processing rolled oats yourself for the oats ingredient.
