Warm Ginger Zucchini Oats Breakfast Bowl
Ingredients
- 1/2 cup quick oats
- 1/3 zucchini, grated
- 1 tbsp ground flax seed
- 1/2 tsp cinnamon
- 1/4 tsp ginger powder or 1/2 tsp fresh ginger
- 1 mashed banana
- 1 cup unsweetened almond milk
- Salt to taste
Toppings

- Pepitas
- Cacao nibs
Preparation
Add all ingredients to a saucepan and bring to a simmer on the stove top.
Stir and allow oats to cook for about 3 minutes.
Adjust flavor as desired, such as adding more ginger or a little maple syrup to sweeten.
