Gingerbread Overnight Oats with Spiced Almond Butter

Ingredients

  • 1/2 cup oats
  • 2 tsp chia seeds
  • 1/2 cup hot water
  • 1/2 cup non-dairy milk
  • 1 tsp blackstrap molasses
  • 1 Tbsp maple syrup
  • 1/4 tsp pumpkin pie spice

Spiced almond butter components

  • 1-2 tablespoons almond butter
  • pinch of pumpkin spice
  • cinnamon to taste
  • ground ginger to taste

Preparation

  1. Mix all ingredients in a jar.

  2. Let set overnight.

  3. Serve warmed with spiced almond butter and extra non-dairy milk or yogurt.

Butter mixing

  1. Warm almond butter until runny.

  2. Stir in a pinch of pumpkin spice or cinnamon and ground ginger.
